Cooking Classes

Our Executive Chef and culinary team will teach you everything from knife skills, to scaling recipes, to cooking a new style cuisine. We offer an intensive personalized experience from new and experienced chefs. Inside the professional kitchens at Food Studio North on the SUNY Geneseo campus.  All classes will be offered on June 3rd, 10th, and 17th. Space is limited, reserve your spot now!

Stocks, Soups, and Sauces

June 10 | June 17 | 9:00 a.m. - 11:00 a.m. | $35
A hands-on approach to stocks, soups, and sauces teaching you how to make foundation stocks and develop flavor for soups and sauces. Demonstrating and applying proper techniques, understanding standards for ingredient preparation, proper cooking temperatures, and flavor development.

Knife Skills

June 10 | June 17 | 9:00 a.m. - 11:00 a.m. | $35
Become acquainted and adept with the most classic and important of all chef's tools, and your time in the kitchen will be transformed. In this hands-on class, you'll hone basic knife skills and practice the fundamental cuts - mince, dice, brunoise, bâtonnet, and julienne. Plus, our instructor will teach you a few advanced techniques and offer tips for keeping all of your knives maintained and sharp.

Kitchen Math

June 10 | June 17 | 9:00 a.m. - 11:00 a.m. | $25
A class focused on understanding the use of math in the kitchen. Cooks will leave this class with a working knowledge of how to adjust recipe volumes, determine and produce edible portion sizes, calculate food costing and understand food waste logs.

Avoiding Food Allergens

June 10 | June 17 | 9:00 a.m. - 11:00 a.m. | $25
This comprehensive, interactive course helps restaurant workers better understand the needs and safety precautions required when serving guests with food allergies. The program is training for workers from the hostess in the front of the house, to the manager and executive chef, to the line cook in the back of the house - about the severity of food allergy and the precautions that must be taken. Important topics such as hidden ingredients and cross-contamination will be covered.

Cuisine Cooking

Appetizer to Dessert: A Complete Gastro Pub Dining Experience 

June 10 | June 17 | 9:00 a.m. - 1:00 p.m. | $75
In this class, participants will have the opportunity to complete a full course Gastro Pub meal in a specific cuisine. It begins with soups and appetizers to entrée and dessert. At the completion of class, it is a tasting event for all!
