The Campus Auxiliary Services (CAS) culinary team won a silver medal during a recent Market Basket Culinary Competition at Skidmore College. The American Culinary Federation sanctioned the event, allowing chefs to hone their craft and put their knowledge and skills to the test in a competitive format.
Executive Chef Matthew Laurence and chefs Michelle Halloran, Illana Stevenson and Wilson Castillo competed as one of 11 teams comprising campus chefs from the Northeast. Each team was required to create four plates of three separate dishes utilizing as many surprise ingredients as possible presented by the market basket.
The ingredients included pheasant, bison, skate wing, dragon fruit, popcorn and a local coffee-flavored beer. The Geneseo team chose a Thai-inspired menu with crispy skate wing, cucumber salad and red chile sauce, Thai curry noodles with pheasant and a macadamia tart with mango and dragon fruit.
